  • 1 small mango
  • 1 avocado
  • 1 red onion
  • 1/2 red pepper

  • Fresh chives, coriander and parsley to taste
  • Paprika powder to taste
  • 100 g cooked quinoa
  • Handful of roasted cashew nuts and pumpkin seeds
  • Handful of sprouts

What do you need for the dressing of Spicy Mango Avocado Salad

  • 2 tbsp (vegan) mayonnaise
  • 1 clove of garlic
  • small piece of ginger
  • Piece of red pepper
  • 1 tbsp onion
  • 2 tbsp soy sauce
  • 1 tbsp water
  • 1 tbsp lemon
  • 1 tbsp ketchup
  • fresh coriander to taste
  • 1/2 tsp paprika powder

Preparation of Spicy Mango Avocado Salad

  1. Cook the quinoa according to the package
  2. Cut the mango and avocado into cubes
  3. Cut the red onion into thin half moons and set 1 tbsp aside for the dressing
  4. Finely chop the red pepper and spring onion
  5. Put all the ingredients for the dressing in the food processor and mix until it has become a nice smooth dressing
  6. Bake the cashew nuts with the pumpkin seeds and a little salt and pepper
  7. Mix the leaf lettuce with the quinoa and pour the dressing over it, stir well
  8. Sprinkle the avocado, mango, pepper, spring onion, bean sprouts and red onion over the salad and top with the fresh herbs, sprouts and cashew nuts.
