Summer fruit chia jam

No one will deny that the summer is nice because of the warm weather, but why I also love summer so much is because of the delicious summer fruit!
Strawberries, raspberries, blackberries, wild peaches, cherries and so on. To eat that fruit in a different way than in your (coconut) yogurt, to decorate a smoothie bowl or to make a smoothie with it, I made a summer fruit chia jam from it. Very tasty on a home-made blackberry scone (link), through your yogurt, on a sandwich or a cracker. In short, a tasty, added sugar-free and multi-useful fruit delight.
What do you need for the Summer fruit chia jam
- 3 wild peaches
- 75 gr raspberries
- 2 to 2 1/2 tbsp chia
- 1 tsp vanilla powder
- splash of water

Preparation of Summer fruit chia jam
- Peel the peaches (you should pull the skin off this way)
- Cut the peaches into cubes
- Pan a saucepan and place it on a medium heat
- Put the peaches in the pan with the raspberries
- Add the vanilla and chia seeds and a splash of water and stir well
- Let it boil and then reduce until you think it's the right substance (I like a coarse jam, but if you want a fine jam you can puree the fruit)
- Pour into an airtight jar and refrigerate and enjoy for a week (if the jam lasts that long ;) )
