Best Filled Blueberry Banana Bread recipe

This week will be a busy week, with no time for breakfast. A healthy breakfast that I can take with me on the road would therefore be very useful. Looking for something sweet with fruit, because I really like that in the morning. Blueberries are my favorite, but you can't bake bread with them yet. We add some bananas and some almond flour. I just opened the cupboard and looked at what I still had in my house and that was a lot so it turned out to be a super breakfast I think and even the best filled banana bread ever made. Super breakfast but also very tasty as a dessert with a cup of tea or coffee.

What do you need to cook Best Filled Blueberry Banana Bread recipe  

  • 3 ripe bananas
  • 50 g dried apricots
  • 3 tbsp thick juice
  • 3 eggs
  • 100 g almond flour
  • 60 gr oat flakes
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 20 g palm sugar
  • 40 g walnuts (chopped)
  • 250 gr blueberries
  • handful of slivered almonds

    Preparation of Best Filled Blueberry Banana Bread recipe

    1. Preheat the oven to 175 degrees
    2. Puree the bananas, apricots with the thick juice in the food processor
    3. Beat the eggs in a large mixing bowl
    4. Add the banana puree, almond flour, oat flakes, honey, vanilla extract, ginger, cinnamon, baking powder, palm sugar and walnuts and stir well.
    5. Grab a cake tin and put 200 gr blueberries and some almond shavings on the bottom
    6. Pour the batter into the cake tin and place in the oven for about 60 minutes
    7. From the remaining batter I fill 16 cupcake molds (I had very small ones), put 1 blueberry on the bottom and 1 blueberry on top of the batter and some almond shavings, place this in the oven for about 25 minutes
