Carrot Lox with Fresh Apple Salad: A Vegan Comfort Delight

Carrot Lox a.k.a. carrot salmon, mmm, that may sound more exciting than it is. It is really mega tasty. My mother used to make salmon on toast with an apple salad, that was my favorite!

Of course I created a vegan version and the result is really finger-licking good. What I like about plant-based and wholefood food is that you discover flavors and combinations that I would otherwise never have thought of. For example, we often eat a plate full of vegetables without it tasting like a plate full of vegetables. Perfect if you, like me, have children.

Did you know

Carrots were originally purple, red, or yellow. The familiar orange variety was cultivated in the 17th century in the Netherlands as a tribute to the House of Orange. Rich in Beta-Carotene: This antioxidant gives carrots their orange hue and converts to Vitamin A in the body, which is essential for healthy vision, skin, and immunity.
