Carrot Lox a.k.a. carrot salmon, mmm, that may sound more exciting than it is. It is really mega tasty. My mother used to make salmon on toast with an apple salad, that was my favorite!

Of course I created a vegan version and the result is really finger-licking good. What I like about plant-based and wholefood food is that you discover flavors and combinations that I would otherwise never have thought of. For example, we often eat a plate full of vegetables without it tasting like a plate full of vegetables. Perfect if you, like me, have children.

What do you need to make Carrot Lox recipe


Ingredients


  • 2 to 3 large organic carrots
  • liquid smoke
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tbsp seaweed
  • 500 ml vegetable stock
  • 1 tbsp caper juice
  • 1 tbsp capers Handful of dill

For the apple salad


  • 2 to 3 large organic carrots
  • 2 tbsp vegan mayo
  • 2 spring onions or 1 small onion
  • Pinch of garlic powder to taste
  • Pepper to taste
  • Pinch of Himalayan salt to taste
  • 2 tsp liquid smoke
  • 1 large green apple
  • Parsley to taste
  • Dill to taste
  • Pinch of paprika powder to taste

PREPARATION OF Carrot Lox with apple salad recipe

  1. Soak the goji berries and chia seeds in some water for about 10 minutes. The chia then becomes a
  2. Wash and peel the carrots until they are clean
  3. Then continue with a peeler to make nice long slices
  4. Put all the carrot slices together with all the ingredients of the carrot lox in a saucepan, put in the fridge for 1 hour to marinate
  5. Then put the saucepan on the heat and cook the carrots until you have a texture that you like. My partner prefers soft salmon, then you cook it a bit longer.
  6. In the meantime make the apple salad
  7. Peel the apple and chop very finely
  8. Chop the spring onion or onion very finely
  9. Put all the ingredients together and mix until you have a nice and tasty sauce-like salad
  10. Let the carrot cool, put in a container that you can close in the fridge
  11. Take some toast, spread the apple salad on it, drape the carrot slices over it and sprinkle some salt over the carrot before serving, top with some capers and enjoy!
