I've been craving a stew with (vegetable) chicken all week, but the downside is that it often takes a little longer than other meals. It is of course more than worth the effort if it tastes heavenly, so tonight it just had to happen... Got all the ingredients and got to work. Believe me, you will surprise everyone with this stew!

What do you need to cook Heavenly stew with chicken
2 leek
Hand full of chestnut mushrooms
3 stalks of spring onion
1 shallot
2 cloves of garlic
2 tsp flour
2 dl vegetable or chicken (flavor) stock
200 ml dry white wine
200 gr vegan cream cheese with herbs
Olive oil freshly ground black pepper (I use an acacia wood salt and pepper mill)
Cut the leek, spring onion, chestnut mushrooms and shallot into fine pieces.
Heat a pan (oven-proof) and add a dash of olive oil.
Once the olive oil is hot, put the vegetables in the pan and add the crushed garlic.
Sprinkle the flour over the vegetables and stir it through.
Add the wine and stock slowly and bring to the boil while stirring.
Remove the pan from the heat and stir the cream cheese into the vegetable mixture.
Add some salt, pepper, oregano and Italian herbs to your own taste.
Stir the chicken through everything.
Finally, sprinkle the cheese over it and place the pan with a lid on gently for another 10 to 15 minutes.
If you want a more hearty meal, you can also add potato slices to the mixture and add extra vegetables. I did that last time and it tastes delicious too!
