What do you need to cook Vegan Quiche recipe

  • 300 g chickpea flour
  • 100 ml vegetable milk
  • Pepper to taste
  • 2 cloves of garlic
  • 2 onions
  • Himalayan salt to taste
  • 20 g nutritional yeast flakes
  • fresh herbs to taste
  • Italian herbs to taste
  • 1/2 zucchini
  • 1 leek
  • Vegan feta crumbles to taste
  • Handful of pine nuts to taste
  • Thyme to taste

Preparation of Vegan Quiche recipe

  1. Preheat the oven to 180 degrees
  2. Cut the zucchini into small cubes, onions into strips and finely chop the leek and garlic
  3. Fry all the vegetables in a frying pan with some olive oil or coconut oil, season with water, pepper, salt and Italian herbs including thyme
  4. Make the mixture by mixing the chickpea flour with the vegetable milk and a small dash of olive oil
  5. Cover a spring form with vegan puff pastry or make your own from yuca*
  6. Bake the base in the oven for 5 minutes
  7. Add the vegetables to the mixture and pour into the spring form
  8. Top off with vegan feta, pine nuts and thyme
  9. Put in the oven for 45-60 minutes, check after 45 minutes with a skewer whether the quiche is done, otherwise cover with some aluminum foil and bake for another 15 minutes
  10. First let it cool down, take it out of the spring form, cut it and enjoy!
