With this warm weather you don't always feel like cooking extensively, but rather fancy a fresh, light meal. A few weeks ago we ate Gazpacho in Spain. In other words, cold vegetable soup. Ideal in such warm weather.

The nice thing about Gazpacho is that it is easy to make, is full of vegetables (so it is not a weak vegetable soup) and of course it is very tasty. Also perfect as a healthy lunch because it is filling.

So if you want to put something healthy and tasty on the table quickly, Gazpacho is definitely recommended!

What do you need to cook Well-filled Gazpacho recipe  

  • 1 1/2 garlic cloves
  • olive oil
  • 1 onion
  • 500 g of tomato
  • 2 red peppers
  • 1/2 cucumber
  • 50 ml red wine vinegar
  • 100 ml tomato juice
  • salt
  • freshly ground pepper
  • Chili flakes

    PREPARATION OF Well-filled Gazpacho recipe

    1. Peel the onion.
    2. Cut the tomatoes into wedges.
    3. Halve the peppers, remove the seeds and cut the peppers into strips.
    4. Cut the cucumber into pieces.
    5. Puree the garlic, onion, tomato, bell pepper, cucumber, vinegar, drizzle of olive oil and tomato juice and season with salt, pepper and chilli flakes.
    6. Serve the soup in bowls.
    7. Cut a spring onion into small rings and garnish the soup with it.
